About this brew

For Solar Flair we worked with Escarpment Labs using an experimental thiol-boosting yeast. This strain was selected to deliver exceptionally balanced thiol expression, with vibrant notes of white grape, blackcurrant, and tropical fruits. Beers like this let us explore how far we can push aroma by combining hops, yeast, and fermentation science.

What Are Thiols?

Thiols are tiny compounds in hops that create some of the most exciting tropical aromas in beer, like passionfruit, guava, and grapefruit. In many beers these aromas stay locked up and never fully emerge. This experimental yeast excels at biotransformation, converting hop compounds into free thiols during fermentation and unlocking bright, expressive aromatics that would otherwise remain hidden.

How We Brewed It

To highlight the tropical aromatics, we built the recipe around thiol-forward hops added at every stage of the brewing process, from the mash to dry hopping. During fermentation, the yeast drives biotransformation, enhancing the beer’s aroma and delivering consistent, vibrant tropical and fruit-forward notes.

Before your first sip, notice what jumps out:

• Passionfruit
• Mango
• Grapefruit
• White grape and blackcurrant hints
• Bright tropical hop aroma

These aromas come from thiols that the yeast helped unlock during fermentation.
